Homemade Vanilla Ice Cream – 4 points plus

Since deciding to switch to a more whole foods diet I am becoming more aware of how many “diet” foods I used to eat that were NOT good for me. Yes, they were labeled as low fat but they were highly processed and had ingredient lists a mile long. I am trying to figure out a way to eat a healthy diet made up of real food. It’s tough, but definitely possible and worth it.

This is a real food points plus recipe. By replacing the white sugar we would normally use with a natural source of sugar, like maple syrup, we can enjoy a whole food ice cream at only 4 points plus. Top with tons of berries or bananas for a points-free topping! My absolute favorite is to chop up a just barely ripe banana on top of this ice cream. It is my favorite!

Ingredients
1.5 cups half/half
3 tablespoons maple syrup
3 tablespoons pure, real vanilla extract
dash cinnamon

In a large bowl, combine all ingredients and let sit in the fridge for at least an hour. After mixture has marinated, pour into your ice cream maker (I have and LOVE this one and found a refurb on ebay for $35).

Once mixture is finished (about 15-20 minutes) serve with fresh berries, peaches, bananas or any desired fresh fruit and enjoy!

Makes 4 Servings: 4 points plus each
